When we get our weekly farm share from Vesterbrook Farms, everyone is always so excited to see what is in our boxes. I love supporting a local farm and knowing where our food is coming from.
This is our Double Combo Share of fruits and vegetables
This is our Double Fruit share. We freeze ¼ of it to last us though the winter!
However, anything dealing with meals or food prep is extremely taxing for me, especially when my husband is out of town. I have two boys, which are let’s just face it, bottomless pits that NEVER stop eating. And I mean NEVER. They can eat 2 eggs, waffle and pancake, hash-browns, cantaloupe, and a bowl of cereal for breakfast and I kid you not 5 minutes later, “Mommy, I’m staving!”
It’s taxing to have to be continually prepping food and then doing the dishes all day long. This week I’ve been doing a lot of research and Pintresting to find an easier way.
Thursday night was a long night of food prep, but here are the fruits of my labor!
I cut strawberries (I tried doing the vinegar bath to keep them fresh for the week – we will see if it works), pitted cherries, washed grapes, cut cantaloupe, tomatoes, cucumbers, zucchini, carrots and red peppers. I also bought a large carton of yogurt and hummus and divided it up into smaller ones.
The best part of this entire event, was getting to see how clean and organized my fridge could be!
Who knew… lol
Vegetable drawer – Tomatoes, Carrots, Zucchini, Red Pepper, Radishes
Fruit Drawer – Strawberries, Cherries, and Grapes
Individual yogurt and hummus
Apples and Oranges in their own bin. Cut cantaloupe, Hard Boiled Eggs, and Cheese Sticks!
Friday morning, when my boys awoke, I told them I had something to show them. They were both very excited that they can get their own food whenever they want!!
Every time my 5 year old would open the fridge throughout the day he would say, “I love this mom.” “I love these little pouches.” “I can get my own food whenever I want, thanks for doing this mom.”
We will see how it goes this week!
Things I don’t love – I wish that I could find a better solution then using disposable snack ziplock baggies and the plastic ziplock containers – does anyone have any suggestions?
I would love to know how you guys all store and prep your food to make your life easier for the week!
